Blah! Morning…. I didn’t sleep… *sigh* oh well I have tons of things to get done today.
Coffee…. Two cups this am because I just couldn’t wake up! Each cup had 1TBSP creamer, 2 sweeteners, and a dash of cinnamon…. Soooo sleepy….
Here is my new water sipping weapon:

Breakfast: 1 pouch of Quaker Hearty Oats Banana Nut with ½ cup of Ultra-Skim Milk.
I was going to eat again after Ed woke up but I got busy and well didn’t! LoL
Self-maintenance morning: eyebrows done, hair dyed, and nails polished (I’ll regret the last one here in a few lines)
There was a major fruit massacre today in my kitchen! I cut up 1 whole water melon, 1 cantaloupe, 2lbs of grapes, 1 package of blueberries, 2 pineapples, and 2 packages of strawberries. That equals a grand amount of fruit salad! I also made several packages of Sugar Free Strawberry Jell-O. There was a bit of a disaster and most of it ended up in the bottom of my fridge L it stunk I cried and flipped out and played the “why God” card, Ed told me to get a grip and we assessed and fixed the situation… all is now well… I managed to do all that and only cut my thumb! Impressive!
Snack: 1cup fruit salad. (Did you think I wasn’t going to sample?)
The fruit salad and Jell-O are for the church picnic tomorrow! Now on to what I made for me ;)
I decided next week for work I’d love to take meatloaf sandwiches. Ed HATES meatloaf and I love it. Sad. I rarely eat it so I decided I’d make a big one slice it up and sandwich it for next week. I tried a new recipe!
**Recipe Alert: Extreme Veggie TurkeyLoaf
1lb of groud turkey, 2 cups of cauliflower, 2 cups of Mirepoix mix, 16 wheat crackers, and a half a cup of egg whites.
Chop the cauliflower finely, crush crackers, stir all ingredients well. Bake at 350 for 45min-1hr. Now here are some pics:

Here are the stats I set this up for 5 servings…. Each serving is 200 calories… ok it’s 196 but what’s 4 calories between friends? The taste was good however it fell apart easily next time I would run the whole thing through the food processor and add a little less egg white.
**Tip- I cook my meat loaf raised up on foil. This allows fat to drip away and it doesn’t ‘boil’ in the fat!
By the time this was in the oven I realized I had hardly eaten today and it was 3pm. I was famished and cranky.
I have a tendency to throw things together and pray that it tastes good! Today’s throw together was yummmz x 10! I made two pizzas. I made Ed a bacon, chicken, cheddar, ranch pizza and I made myself a chicken buffalo blue cheese pizza. Now I know what you are thinking ‘what the heck Jen that isn’t diet food?!’ Well sure it is!
**Recipe Alert: I used 1/3 of a pre-made pizza crust, 4oz of grilled chicken, hot sauce, and Bolthouse Blue Cheese Yogurt dressing.

Oh my was it good! It killed two bad cravings I was having: Pizza and Wings!
Snack: Frozen Fruit Bar (strawberry)
By this point in the day I was utterly exhausted! Relaxing on the sofa…. Sipping an iced coffee… I had already thrown some food that needed used up in a pot now to figure out what to do with it from that point for dinner….
** Recipe Alert: Iced Coffee ½ cup of Ultra-Skim Milk, cold left over coffee, 1 shot of any flavor Sugar Free DiVinci Syrup ( I use caramel), 2 sweeteners, and a ton of ice =
I had two iced coffees! Mmm so tasty!
Dinner ended up being the following:
**Recipe Alert: 1lb of ground turkey browned, 1 package frozen onion/pepper mix, 1 jar of verde sauce, 1 cup of water, ½ cup uncooked brown rice. Add salt, pepper, and garlic to taste. Let’s call this a delicious green mess! It was a tasty southwest stoup! I added two Tbsp of FF sour cream to mine! So good!

Exercise: I didn’t do any formal exercise today however as much as I was on my feet and as sore as I am now I’m assuming I got a good burn!
Water: No so much! I drank a ton of stuff, but not a whole lot of plain water. I will make up for it tomorrow!
I tried to accomplish too much today. It caused more chaos then necessary and some things just backfired. I’m super excited for the picnic tomorrow. I know that there will be extreme temptations: burgers, desserts, and sides. I’ve made two healthy options and I’m hoping the girls from my weight loss group will bring healthy foods as well. I’m trying to plan in advance as I’ve learned not to rely on other people. I’m not trying to say that meanly but because I’m really trying to stay on track I need to have plans!
Please pray for my church’s 70th yr anniversary tomorrow. It is calling for severe rain storms! Booo! L
Praises: Thank you Jesus! You have showed me the error in my way today. I was trying to accomplish too much and not living to praise You. I’m so thankful my best friend had her beautiful baby girl today and now I’m an auntie! Yays!

Those pizzas looked amazing and you got so much done today!! Tomorrow I gotta get my butt in gear and get some stuff done too! I'll pray that it doesn't rain on your church picnic tomorrow! Even though I live in the "house of sin" I can pray, you know! :)
