Waffling! Check out my Melons! New Recipes

Woooooaaaaaah!  Goood Morning!  I SLEPT IN! That’s right me who never ever sleeps in on the weekends slept in!
Wake-up: 9am!
Coffee: 2 TBSP of SF Hazelnut creamer + 2 sweeteners
Breakfast---- I wanted a HUGE breakfast this morning! I was seriously craving some McD’s… So I made my own.  Now this is not my original idea so I’m not going to take credit.  I took this:

 and made it my own….

**Recipe Alert**
2 toasted waffles, 1 egg scrambled with 1/2cup of egg whites, 2 slices of turkey bacon, 1 slice of FF cheese, and ¼ cup of sugar free maple syrup… OH MY THIS WAS TASTY!!!!!!!!!!!!!!
This was a little high on the calorie scale, but I was full for a very long time!
I had originally planned to spend a day with a friend, but she was not feeling well so my day opened up… what to do… clean… I cleaned the bathroom and the kitchen… I prepped tons of food for our family picnic tomorrow… wrote a lesson plan for Sunday School… and then finally and most importantly I held the couch down! Couches are sneaky and they will just jump right up and run out the door if you don’t hold them down occasionally J
I wanted to show you how I cut a watermelon… I know that seems silly but it took me forever to figure out the best way to cut one and I thought maybe I can save you some grief if I show you how!
Place an old hand towel under your cutting board to catch the juices... Cut in half.... Lay flesh side down... Cut off rind...

Naked!

Slice in large wedges

Lay wedges flat

Cube

Chunked up!

Now that's a lot of melon!

I also cut up 2 large cantaloupes:

**Recipe Alert** Nutty Cole Slaw:
1 bag of tri-color cole slaw mix, 1 bag of broccoli slaw mix, 1 jar of Walden’s Farms No Calorie Slaw Dressing, ¾ cup of cranberry and nut mix(reserve ¼cup to sprinkle on top), ½ cup of dried cranberries, 1 packet of splenda…  Mix all ingredients… sprinkle ¼ of mix on top. Refrigerate overnight.

I snacked on some cantaloupe and watermelon while I was slicing it up… I also had a few bites of cake… I had bought a slice of cake yesterday and I decided I would take a bite or two every day.. Why? Well I decided that I wanted a piece of this cake…. It looked amazing…. I knew that by now I had built up enough will power to not eat the entire thing in one sitting… In fact 3 months ago I probably would have ate the entire slice of cake in the car on the way home… But I didn’t... that was the old way of thinking… that life was all about the way something tasted and not how it affected your body… I realize now that it’s important to control the food that enters my body not just because of calories, but also to keep my IBS in check!  Yum!

Lunch: 16 wheat crackers, 2 TBSP of Hummus, and a NEW Dannon Oikos Greek Yogurt with Strawberry Fruit on the bottom….

If you have never give Greek yogurt a try I would recommend this... it's tangy and think like classic greek yogurt but the fruit gives enough sweetness to make a transition from regular yogurt.....

Before the stir

Stirred not shaken!

This is how my dog spent most of his day….

By dinner time I was running a little low on calories….
I GRILLED!!!

I went with a turkey burger on a lite wheat bun with a slice of FF cheese, 1 sliced up cucumber with homemade dip, and grilled asparagus with 1 cup of watermelon:

Dip: This is Tastfully Simple ‘Garlic Garlic Dip’  I made it with 1cup of FatFree Sour Cream + 2 TBSP of Aldi’s Fit and Active Light Mayonnaise.  It totals about 40cal for 2TBSP.
I should be right on track for family festivities tomorrow... I've planned as best as I can and now am praying for the strength I'll need from God to resist temptation.
I'm stuffed and lazy.... I'm going to kick my feet up and rest.... I may have a small snack later... If so it won't be more then 100 calories....
Calories: 1,369                Water: Tons!
Praises: I'm thankful for air conditioning! Oh Lord was it a hot day! I mean even with window air conditioners it was sooo hot! I'm thankful that God gave me a day to catch up on all of my work... A day where I was able to just focus on the house, food, and planning.... I am praying my friend Karen feels better.  I'm also praying for nice weather tomorrow since we are having my family's picnic.  I hope that if you are reading this you are blessed and just know you are in my prayers...
xoxo
