drizzly miserably oreo oh no!

** To the tune of ‘I feel pretty’ please sing along** I feel drizzly oh so drizzly and miserably and lame!
Ok maybe it’s not all that dramatic, but the migraine, the rain, and general lameness of my day I feel like the above is the theme song for today!

Wake-up: 5:50am
Ohhhh that’s not good for a Monday on a Tuesday…. Shower, hair, make-up, clothes, pack food, make breakfast, drive to work, work, go to gym, stop at the store, come home, cook dinner, shower, and go to bed!

Coffee: 2 TBSP of SF French Vanilla Creamer

It was drizzly and cold this morning I wanted something sweet and warm aside from my coffee.

Breakfast: 1 cup of dry oatmeal, 2 TBSP of SF French Vanilla Creamer, 2cups of water, 2 sweeteners, 1 45 calorie pack of raisins, a dash of vanilla, and a touch of cinnamon. This really hit the spot.  I heard someone describe eating warm food like getting a hug from the inside out and I think that describes oatmeal on a cold day perfectly!



For my morning snack I had 2 cups of cantaloupe.  I’m seriously going to miss summer cantaloupe and watermelon in about 3 months!

For lunch: 1 had 3 pieces of cauliflower pizza (1 serving) 1 cup of cucumber slices with 2 TBSP of Hummus, and 1 cup of cubed watermelon

This is only 1 slice I had ate the other 2 when I remembered to take a picture!



I also had ½ of a 100 calorie pack of BBQ Corn Nuts.  This was my first Corn Nut experience…. I smelled like Fritos afterwards and all I could think of is how I wanted to share my Frito smell with the world… This isn’t something that I would usually buy it was given to me by one of the leaders of our weight loss group… It was odd… good… odd… J

After work I hit up the gym I did 15mins of weight training, 30 minutes on the treadmill, and 15 on the recumbent bike.  I somehow feel more out of shape now than when I first started. I need to work on building my stamina.  Maybe I need to build some enthusiasm too!

I stopped at Wal-mart on my way home for a few items.  Now if you know me well you know I dislike Wal-mart… Yes I shop there frequently, but I do dislike that store so very much….  Today’s experience was slightly funnier and sadder than normal…  Have you seen the new cookies advertised ‘Whonu?s’ They are basically market as a healthy Oreo… Ok I’ll check this out….

 Here is where my dilemma begins… These cookies were on the top self… I’m just over 5ft1inches tall… I tried my very best to reach said cookies… Fail! … then a very beautiful, tall, thin, long haired blonde giggled…. She said ‘awwww I’ll get those for you’ I shrunk not only off of my tiptoes, but on the inside as well…. I had a brief ‘Why God did you make me so short and round’ moment and kindly thanked her for her help… I also pointed out I wasn’t buying cookies I’d just got done at the gym I was just interested in the calories in the cookies… I shot a convincing smile her direction and she smiles back… a smile of pity?.... ugh…  why am I sooo short? And why am I so uncool? Not that I know this women or truly care what she thought of me, but it was just one of those moments where you wished it had been an overweight giant of a man to assist you not Barbie!

Here is where my second dilemma begins… to buy said cookies or not? Ohhhh I scour the calorie count… They are the same as Oreos… 160calories for 3 cookies… oh well I could probably squeeze that in to my misally little allotment of 1300 calories a day… but how would this work… eat just 3 a day? Have you ever been able to eat just 3 Oreos and walk away…. Until the next day?  After a 5minute debate… I decide it would not be a good idea and I put the cookies back on a lower shelf so that if another vertically challenged individual comes along she doesn’t have to feel the same shame!

I came home and started on dinner tonight I made a Very Veggie Pasta! It was sooo yum and such a huge serving! I love huge servings! While making dinner I sipped a cup of coffee in hopes of getting rid of my migraine….
**New Recipe:
Very Veggie Pasta:
1 cup chopped onions fresh or frozen
1 cup chopped carrots fresh or frozen
1 cup chopped spinach frozen
1 cup fresh mushrooms fresh
2 cups of chopped zucchini fresh
2 cups of whole wheat penne
2 cups of spaghetti sauce
1 cup of Fat Free Mozzarella Cheese
4 TBSP of Parmesan Cheese

In a large sauce pot spray non-stick spray at carrots and onions let sauté for 5 minutes, add all other veggies, sauté another 10 minutes stirring occasionally… In another pot bring water to a boil for pasta… Add spaghetti sauce to veggies along with 1 cup of water… season with salt, pepper, and garlic to taste… simmer… add pasta to boiling water… cook for about 5 minutes… drain…. Add to sauce… cook until some moisture had evaporated and pasta is well done… add Parmesan Cheese and stir well… this will make the sauce cheesy and creamy… sprinkle Mozzarella on top and let melt…. Serve! This makes 4 giant portions!
